I have tried, say, txt .txt *.txt but no good. Any suggestion?UltraEdit allows the tab and Word-Wrap settings to be based on the file extension of the file. Initially the defaults will be used. To add an extension type click on Change List and a dialog will be displayed allowing you to add or edit up to 10 extension types.
The tab and Word Wrap settings will change to reflect the extensions shown. The "default" setting is used for any files that do not match the user defined extensions.

Step by step description italic is a comment:
Click on Change List....
Enter txt - only the extension, without '.' or '*'.
If you want to use one tab settings for more extension, enter it with spaces, for example asm src lst.
Press button Add to add the extension to the list.
Press button OK to close the dialog.
That is important: Now select the actually added extension entry from the list left the button Change List...
Then set all values below to your needs for this(these) extension(s).
Press Apply or OK to save all these settings for the extension(s).
