See this topic Config options which contains a downloadable text and RTF files that cover all UE configuration options.  The file is maintained and kept up to date for each new UE release.

Press Ctrl+Shift+P to open the Command Palette window and type what you want to do or scroll down in the list of commands. There is in help of UltraEdit also the help page Command palette which can be easily found using the Search tab. There is available also the UltraEdit Wiki page Command palette. See also on YouTube the 69 seconds video Finding and opening files using UltraEdit's Command Palette from the UltraEdit videos collection. Open changes.txt (plain text file) or changes_ultraedit.md (Markdown file) in program files folder of UltraEdit and search case-insensitive for Command Palette for some more information about this feature. There should be used the browser view or the live preview for viewing the Markdown version of the changes list file.

There can be opened further Advanced - Settings or Configuration - Key mapping and clicked on the button Show key mapping in editor and next closed the configuration with a click on symbol X. UltraEdit creates in this case a text file ue.shortcuts.txt showing all hotkeys and chords (multi-key assignments) as currently defined by default respectively by the user in the key mapping configuration window including the hotkeys and chords assigned to macros currently loaded in UltraEdit. Hotkeys/chords assigned to UltraEdit scripts are unfortunately not included in that list. That file could be added to the Favorites list to be able quickly opening it whenever a lookup for a command with a hotkey/chord wants to be done.

Almost all commands can be executed via the commands and pop-up menus (down arrow symbol right/below a command) on the ribbon tabs in ribbon mode or from the menus in toolbar/menu mode with contemporary or with traditional menus. Right click on a ribbon tab or the main menu/toolbar in toolbar/menu mode to open the context menu and use the appropriate context menu items to change the user interface between ribbon mode, toolbar/menu mode with contemporary menus, or toolbar/menu mode with traditional menus. There are just some caret moving and window scrolling commands and the commands to insert the German characters ÄÖÜäöüß which can be executed only by key and are not available on a ribbon tab or in a menu.

Look also on the UltraEdit power tips and the UltraEdit blogs for even more information about features of UltraEdit and how to use them for efficient work with text files of any kind.
