I think these three things are called fold items:

Is there a way to collapse and or expand all of them at once?

It can be done either by a menu option or using the default assigned hot keys.

To collapse all Folds, from the menu option (Contemporary menus) View menu/Collapse All or press CTRL+ADD (+ button on the numeric keypad).
 
To expand all Folds from the menu option(Contemporary menus) View menu/Expand All or press CTRL+MULTIPLY (* button on the numeric keypad).

Using UE 2023.2.0.27 64-bit.
